Ingredients:
Serves 6, 1/6 total dish per serving
1 Tbsp oil
1 lb boneless, skinless, chicken breast
2 C water
1 C thick & chunky salsa
10 oz. frozen corn (about 2 C)
2 C brown rice, uncooked (Minute Rice brown rice)
1/4 C fat-free cheddar cheese, shredded
Directions:
Heat oil in a large skillet, over medium-high heat.
Add chicken, and cover.
Cook 4 minutes on each side, or until cooked through.
Remove from skillet and set aside.
To the skillet, add water, salsa, and corn. Mix well.
Bring to boil.
Stir in rice, reduce heat to low, and cover.
Simmer for 5 minutes.
Top rice mixture with chicken and sprinkle with cheese.
Cover and simmer for an additional 5 minutes, or until cheese is melted and rice has absorbed the liquid.
