Ingredients:
1 lb Yukon gold potatoes, cut into bite-size chunks
2 C marinara sauce
9 oz. chicken sausage, Italian-style, cooked, cut into bite-size chunks
2 large, Cubanelle pepper, cut into chunks
2 C fresh shiitake mushroom caps, sliced (3 oz.)
1/2 tsp garlic, minced
1/2 tsp fennel seed
3 Tbsp fresh parsley, or basil, chopped
Directions:
Combine potatoes, marinara sauce, sausage, peppers, mushrooms, garlic, and fennel seed, in crock pot.
Cook on low for 6 hours.
Stir in parsley or basil.
