1 14 1/2 oz. can crushed tomatoes, fire-roasted, undrained
2 oz. red wine, dry
1 Tbsp tomato paste
2 cloves garlic, minced
3/4 tsp dried oregano, crushed
3/4 tsp salt
1/4 tsp black pepper
4 bone in, skinless, chicken thighs
2 C mushrooms, sliced, fresh, frozen, or canned
1 medium green pepper, thinly sliced
1 small onion, chopped
1/4 C olives, chopped
Directions:
Place chicken in a 3-5 quart crock pot.
Add mushrooms, green pepper, onion, garlic, tomato paste, tomatoes, juice, wine, oregano, salt and black pepper.
Cook on high for 5-6 hours or low for 6-8 hours.
