Ingredients:
Serves 16, 1 slice per serving
2 sprays non-cooking spray
1 C all-purpose flour
3/4C whole wheat flour
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground allspice
1 tsp salt
1 C pureed winter squash
2 large eggs
2/3 C unsweetened applesauce
1/2 C dark brown sugar
1/4 C vegetable oil
1 tsp vanilla extract
2 Tbsp chopped pecans, toasted
Directions:
Preheat oven to 350 F degrees. Spray a 9x5 loaf pan with cooking spray.
In a medium bowl, whisk flour, wheat flour, baking soda, cinnamon, ginger, allspice, and salt.
In a large bowl, combine squash puree, eggs, applesauce, sugar, oil, and vanilla, using an electric mixer. Beat on medium speed, until well combined.
Fold dry ingredients into wet ingredients until just combined.
Pour batter into prepared pan. Sprinkle with pecans.
Bake for 55 to 60 minutes, or until a toothpick inserted in center comes out clean.
Cool completely, remove from pan, and slice into 16 pieces.
