Ingredients:
Serves 6, 1 C per serving
non-stick cooking spray
3 C non-fat beef broth
2 cloves garlic, minced
1 Tbsp tomato paste
2 C cabbage, chopped
1/2 yellow onion
1/2 C carrots, chopped
1/2 C green beans
1/2 C zucchini, chopped
1/2 tsp basil
1/2 tsp oregano
salt, to taste
pepper, to taste
Directions:
Spray a large stock pot with non-stick cooking spray.
Sauté onions, carrots, and garlic for 5 minutes.
Add broth, tomato paste, cabbage, green beans, basil, oregano, salt, and pepper.
Simmer for 5-10 minutes, or until veggies are tender.
Add zucchini. Simmer for 5 minutes, or until heated through.
