Ingredients:
Serves 6
2 lbs boneless, skinless, chicken breasts, cut into cubes
1 onion, finely chopped
20 oz. canned pineapple chunks, cut into small pieces
2 Tbsp soy sauce
1 tsp ground ginger
1 tsp paprika
1/2 tsp pepper
1/3 C honey
1 Tbsp cornstarch
1 red bell pepper, diced
Directions:
Place chopped onion in crock pot. Top with cubed chicken.
Drain pineapple juice into a medium bowl. Set pineapple chunks aside.
To the bowl, add soy sauce, ginger, paprika, pepper, and honey.
Add cornstarch to pineapple mixture. Whisk until fully dissolved. Pour sauce over chicken.
Add diced red bell pepper to crock pot. Stir to combine.
Cook on low for 6-8 hours, or on high for 4-5.
Serve with white rice, or your favorite sides.
