Ingredients:
Yield: 1-2 dozen
3 large, very ripe bananas
2 1/2 C rolled oats
3/4 C raw cashews
3/4 C raisins or dried cranberries
1/4 C peanuts, roughly chopped
1/4 C sesame seeds
3/4 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
Directions:
Preheat oven to 350 F degrees. Set oven rack in the middle of oven. Line a baking sheet with
parchment paper or a silicone baking mat.
Combine bananas, cashews, cinnamon, baking soda, and salt, in the bowl of a food
processor. Pulse until smooth.
In a bowl, combine oats, dried fruit, sesame seeds, and chopped peanuts.
Add banana mixture to dry ingredients.
Mix until combined. Use a spoon, and your hands, to form cookies. Transfer to baking sheet. Cookies won't rise, so place fairly close together.
Bake for 25 minutes, or until edges just begin to brown, but centers are still soft.
Transfer to a wire rack to cool.
