Ingredients:
Yield: 2 dozen
2 pie crusts, homemade or store-bought
2/3 C sugar (optional: mix half white and half brown sugar)
1/2 C (1 stick) unsalted butter, melted
2-2 1/2 Tbsp cinnamon
Directions:
Preheat oven to 350 F degrees.
Line 1 or 2 baking sheets with parchment paper.
Combine sugar(s) and cinnamon in a small bowl. Mix well.
Roll pie crusts, on a lightly floured surface, into a large rectangle.
Brush melted butter over dough and evenly sprinkle cinnamon sugar mixture on top.
Starting with the long end closest to you, roll dough over itself to create a long log.
Cut log into 1 inch rounds and transfer to lined baking sheet.
Bake for 8-10 minutes, or until cookies are lightly golden.
Cool 5 minutes before transferring to a wire rack to cool completely.
