Ingredients:
Yield: 2-3 dozen
1 1/2 C steel-rolled, old-fashioned oats
1 1/2 C semisweet chocolate chips (or dark chocolate)
1 1/3 C all-purpose flour
2/3 C brown sugar
1/2 C (1 stick) unsalted butter, divided
14 oz. sweetened condensed milk
1 large egg
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
Directions:
Preheat oven to 350 F degrees.
Line an 8x8 or 9x9 baking dish with parchment paper. Lightly spray with non-stick cooking spray.
In a small bowl, combine flour, oats, baking soda, and salt.
In a large bowl or mixer, cream 6 Tbsp butter and sugar, until lightened in color and fluffy.
Beat in egg and vanilla. Slowly beat in dry ingredients.
Microwave, in 30 second intervals, condensed milk, chocolate chips, and remaining butter. Stir until completely melted and smooth.
Spread 2/3 of dough mixture into baking dish. Pack into bottom.
Top with melted chocolate, evenly coating the dough.
Spoon remaining cookie mixture over chocolate layer.
Bake for 25-30 minutes, or until top is golden brown.
Let cool completely before cutting into squares.
