Ingredients:
Serves 8, 1 piece per serving
1/2 C Kraft fat free shredded cheddar cheese
3 1/2 C cauliflower, raw
2 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla extract
4 Tbsp egg substitute, regular, liquid
Directions:
Break cauliflower into semi-small pieces and place in a food processor.
Pulse until reduced to half the size of a grain of rice.
Steam cauliflower for 10 minutes.
Place cauliflower in a nut bag, or wrap in several layers of cheesecloth.
Twist and squeeze until all liquid is removed.
Place in a medium bowl or mixer. Add cheese, cinnamon, nutmeg, vanilla, and egg. Mix well to combine.
Preheat oven to 425 F degrees.
Spread mixture firmly into the bottom, and up the sides, of a 9 inch pie dish.
Bake for 10-15 minutes, or until lightly golden brown.
Cool completely before adding desired filling.
