Ingredients:
1/2 C (1 stick) butter, room temperature, plus more for greasing
1/2 C granulated sugar
1/2 C packed brown sugar
1/2 C plus 1/4 C creamy peanut butter
1 large egg
1 tsp vanilla extract
1 C all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 C quick cooking oatmeal
6 oz. butterscotch chips
1 C confectionery sugar
4 Tbsp milk
Directions:
Preheat oven to 350 F degrees. Grease a 9x13 baking dish with butter.
Using an electric mixer, cream butter, granulated sugar, brown sugar, and 1/2 C of peanut butter. Add egg and vanilla.
Sift flour with baking soda and salt. Mix oatmeal into flour. Stir flour mixture into cream mixture. Spread batter in pan.
Sprinkle butterscotch chips over batter and bake for 20 to 25 minutes, until browned around the edges.
Whisk confectionery sugar, milk, and remaining 1/4 C peanut butter, until smooth.
Spread evenly over warm bars. Allow to cool completely before cutting into squares.
