Ingredients:
Serves 6
2 C old-fashioned oats
4 Tbsp brown sugar
1 1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking powder
1 large egg
2 C milk
1 tsp vanilla extract
2 Tbsp unsalted butter, melted
1/3 C brown sugar
4 Tbsp unsalted butter, melted
1 Tbsp cinnamon
1/2 C powdered sugar
4 oz. cream cheese, softened
2-3 Tbsp milk
Directions:
Preheat oven to 375 F degrees. Lightly grease a 9x13 baking dish with butter or non-stick cooking spray.
In a medium bowl, mix oats, brown sugar, cinnamon, salt, and baking powder.
In separate bowl, beat egg, milk and vanilla extract. Continue to whisk, gradually pouring in melted butter. Stir dry mixture into wet mixture, until just combined.
Transfer to baking dish.
Bake for 20 minutes, or until oatmeal is set and browned on top.
In a medium bowl, combine brown sugar, melted butter, 1 Tbsp cinnamon. Whisk until combined and smooth.
In a separate bowl, beat cream cheese and powdered sugar.
Slowly add 2 Tbsp milk until icing is smooth. Add remaining milk, if needed, for thinner icing. Drizzle icing over the top and serve.
